Apple-Zucchini Oatmeal Bars
Makes about 24 bars
Ingredients:
1 C. PureLiving Organic Sprouted Spelt Flour
1 C. PureLiving Organic Sprouted Heirloom Blend Flour
1 C. PureLiving Organic Sprouted Rolled Oats
1 tsp. baking soda
1 Tbsp. cinnamon
1 tsp. nutmeg
1 tsp. Shiloh Farms Himalayan Pink Salt
2 large eggs, lightly beaten
1/2 C. Shiloh Farms Organic Apple Butter (or applesauce)
1/2 C. Shiloh Farms Organic Maple Sugar
1/2 C. shredded zucchini
1 medium banana, mashed
1½ C. peeled & diced apple (about 2 medium)
1/2 C. chopped Shiloh Farms Organic Walnuts (optional)
Directions:
1. Preheat oven to 350°
2. In large mixing bowl, combine first 7 ingredients (through salt); set aside
3. In separate bowl, mix together eggs, apple butter, and sugar; stir in zucchini and banana
4. Add egg mixture to flour mixture and stir to combine; fold in diced apples and walnuts
5. Divide batter evenly between 2 greased 8×8 baking dishes; bake in preheated oven 25-30 minutes, or until a toothpick inserted in center comes out clean
6. Cool on wire rack for at least 30 minutes before slicing
