Black Bean & Quinoa Salad with Mango
Yields 2-4 Servings
Ingredients:

1½ C. cooked PureLiving Sprouted Black Beans

1 C. cooked PureLiving Sprouted Quinoa

1 ripe mango, diced

1 medium red pepper, diced

1 small avocado, diced

1/2 C. fresh cilantro, chopped

2 Tbsp. fresh lime juice (or lemon juice)

1/4 C. olive oil

1/2 tsp. dried oregano

Shiloh Farms Himalayan Pink Salt, to taste

freshly ground black pepper, to taste

Directions:

1.  Add first 6 ingredients (through cilantro) to a large bowl and set aside

2.  In separate bowl, whisk together lime juice, oil, and oregano; add salt and pepper to taste

3.  Pour dressing over salad and toss to combine
