Blueberry-Lemon Chia Jam
Ingredients:
2 pints fresh blueberries (can also use frozen)
Zest of 1 large lemon
Juice of 1 large lemon
Pinch Shiloh Farms Himalayan Pink Salt
1/4-1/2 C. Shiloh Farms Raw Alfalfa Honey (or natural sweetener of choice) according to taste
2 Tbsp. PureLiving Sprouted Chia Seeds
Directions:
1. In medium saucepan, combine first 4 ingredients (through salt); bring to low boil over medium-high heat
2. Reduce heat and simmer 10-15 minutes, or until berries have burst and mixture has begun to thicken; stir frequently to prevent sticking
3. Add honey and stir to combine; taste and add more sweetener as needed, depending upon the sweetness of the berries and personal preference
4. Cook another 10-15 minutes, or until mixture is reduced slightly
5. Remove from heat and add chia seeds; stir well to incorporate (jam will continue to thicken as it cools)
6. Pour into glass jars and allow to cool completely before storing in the refrigerator
