Gluten Free Russian Teacake Cookies
Makes approx. 3 dozen
These delightful cookies make a great addition to any Holiday cookie platter. Made from a few, simple, quality ingredients, their flavor is unmatched. And, since the dough is mixed by hand, this is a great recipe to get children involved in the kitchen. They will enjoy helping out and being able to eat something they had a hand in making. Just keep an eye out during the dusting stage for flying powdered sugar!
Ingredients:
1 C. PureLiving Sprouted Millet Flour
1 C. PureLiving Sprouted Brown Rice Flour
1/4 C. Shiloh Farms Tapioca Flour
1/4 C. PureLiving Sprouted Millet
1 C. Shiloh Farms Organic Walnuts, coarsely chopped
1/4 tsp. Shiloh Farms Himalayan Pink Salt
1 C. butter, softened
1/2 C. Shiloh Farms Organic Maple Sugar
Powdered sugar for coating
Directions:
1. Preheat oven to 400°
2. In a large bowl, combine all ingredients and thoroughly mix by hand
3. Roll dough into balls about 1″ in diameter; place on ungreased cookie sheet
4. Bake for 12-14 minutes; remove from oven and allow to cool on cookie sheet for 10-15 minutes before continuing to next step
5. While still slightly warm, dip each cookie in powdered sugar before moving to a cooling rack to finish cooling
6. Once completely cooled, dip each cookie in powdered sugar a second time
