Gluten Free Rustic Pumpkin & Ricotta Tart
Serves 8-10

1 recipe PureLiving Gluten Free Tart Dough

3/4 C. pumpkin puree

1/2 C. Shiloh Farms Whole Milk Ricotta Goat Cheese

1/4 C. Shiloh Farms Organic Maple Sugar

2 egg yolks

1/2 tsp. ground cinnamon

1/2 tsp. ground ginger

Powdered sugar for dusting


1.  Preheat oven to 450°

2.  In a large bowl, whisk to combine pumpkin, ricotta, sugar, egg yolks, and spices; set aside

3.  Roll chilled tart dough into 12″-14″ round, or to a thickness of slightly more than 1/4″

4.  Transfer dough to baking sheet; spread pumpkin mixture evenly over dough, leaving a 2″-3″ border

5.  Roughly fold dough border over filling to form enclosed edge, leaving center filling exposed

6.  Bake in preheated oven until filling is just set and crust is golden brown, approximately 20-25 minutes

7.  Cool on baking sheet for at least 10 minutes before dusting edge with powdered sugar; serve warm or at room temperature
