SOUTHWESTERN TURKEY MEATBALLS
Yields 4-6 servings
Ingredients:
1 lb. ground turkey
1 egg
1 clove garlic, minced
1/4 C. red onion, diced
1/4 C. PureLiving Sprouted Amaranth Flour
1/2 tsp. chili powder
1 tsp. ground cumin
1 tsp. Shiloh Farms Himalayan Pink Salt
1 Tbsp. cilantro, chopped
Directions:
1. Preheat oven to 375°
2. Mix egg with garlic and red onion; add flour and spices, stirring well to combine
3. Add turkey to mixture; using hands or spatula, mix until all ingredients are thoroughly incorporated
4. Working by hand, form 1″-1.5″ meatballs and place them on an aluminum foil lined cookie sheet (spray lightly with non-stick cooking spray)
5. Bake meatballs for 20-25 minutes in preheated oven until done (or meat thermometer reaches 165°)
Tip:
To ensure that meatballs cook more evenly, turn halfway through baking cycle
