SIMPLE SLOW COOKER LENTIL SOUP
Makes 6-8 servings
Ingredients:
2 C. PureLiving Sprouted Lentils
5 C. vegetable broth (or water)
28 oz diced tomatoes, with juice
1 large onion, diced
2 carrots, diced
3 cloves garlic, minced
1/2 tsp. Shiloh Farms Himalayan Pink Salt, or to taste
1/4 tsp. black pepper
2 bay leaves
1/2 tsp. dried parsley
1/2 C. fresh basil, chopped
red wine vinegar, to taste
Directions:
1. Combine first 10 ingredients (through parsley) in slow cooker and stir to combine
2. Cook on low heat 8-10 hours, or until lentils are tender and flavors have melded; remove bay leaves
3. Stir in fresh basil; taste and adjust seasonings as needed
4. Spoon into bowls; to each serving, add about 1/2 tsp. vinegar, or to taste
