Tuna-Bean Salad with Creamy Lemon Dressing
Yields 2-4 Servings
Ingredients:
1 (6 oz) can solid tuna in water, drained
2 Tbsp. fresh lemon juice
1 C. PureLiving Sprouted Garbanzo Beans, cooked
1 C. chopped sweet onion
1 C. chopped celery
1 C. cherry tomatoes, halved
1/2 C. chopped italian parsley
1/2 tsp. black pepper, or to taste
1/4 tsp. Shiloh Farms Himalayan Pink Salt, or to taste
Creamy Lemon Dressing:
1/4 C. plain greek yogurt
3 Tbsp. low fat mayonnaise
1 1/2 Tbsp. dijon mustard
Zest of 1 lemon
Directions:
1. In small bowl, whisk together dressing ingredients until thoroughly combined; set aside
2. In large bowl, toss tuna and lemon juice together, breaking tuna into small chunks
3. Add remaining ingredients (including yogurt dressing) and mix well; taste and adjust seasoning as needed
4. Cover and chill in refrigerator for at least 1 hour to allow flavors to blend
5. Serve over a bed of romaine as a main dish salad or make sandwiches with your favorite whole grain bread or pita pockets
